Getting kids to eat veggies can be tricky so i try everything i can. They love these. Its great with fresh or frozen squash.

Ingredients For fried squash

  • 3/4 lb
    squash cubed (2 medium )
  • 1
    egg beaten
  • 1/3 c
    flour
  • 1/3 c
    corn meal (add more if needed)
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1
    medium onion grated
  • vegetable oil to fry

How To Make fried squash

  • 1
    Cover squash with salted water cooking for 10-15 minutes till tender. Drain and mash enough to make 1 cup, combine with egg mixing well. Mix flour, cornmeal,baking powder,salt then add to squash. Mix well and add onions. Drop by spoonfuls into hot oil till golden turning once.
