This is my aunt's version of fried okra. She did not like to use any flour. My mom preferred this recipe.

Ingredients For fried okra

2 lbfresh okra, smaller ones are better!!

3 lgeggs, beaten

1 tspwater
-
2 ccornmeal
-
1 tspsalt

1/4 tsppepper

vegetable oil
How To Make fried okra

1Rinse the okra; drain well, and pat dry. Remove the tip and stem ends. Cut the okra crosswise into 1/2 inch slices. Set aside

2Combine the eggs and water in a bowl; stir well. Add the okra and toss gently to coat well.

3Combine the cornmeal, salt, and pepper in a bowl; stir well. Add okra to the cornmeal mixture, a few slices at a time, tossing gently to coat well.

4Pour the oil to a depth of 1 inch into a large heavy skillet; heat to 375 degrees. Fry the okra in hot oil over medium heat until golden. Drain on paper towels.
