After making fresh creamed spinach, I wanted to try some kale. I love how it has a more delicate flavor than spinach. I thought since I love mushrooms that I would put them in with the kale. Of course, onions & garlic are a must and I had some bacon still in the refrig and I couldn't resist. Love the turmeric with this dish, as I had read that it is very good for you and so I thought I would try it with the kale too. My Dad loved this Kale and looks forward to having it again.

Ingredients For fried kale with mushrooms and bacon

1 bunchfresh kale, chopped

1 cwhite mushrooms, sliced

4 slicebacon, cooked and crumbled

1/2 mdyellow onion, diced

1 Tbspminced garlic
-
2 tspturmeric, ground
-
2 Tbspred wine vinegar
-
2 tspsalt
-
1 tsppepper
-
2 Tbspolive oil, extra virgin

1 Tbspbutter
-
1-2 tsplemon juice, fresh squeezed
How To Make fried kale with mushrooms and bacon

1Fry up the bacon and then set aside. Sauté the onions in oil and butter for a few minutes and then add your mushrooms. Let them cook down for 5 minutes and then add your chopped up kale, garlic, vinegar and turmeric. Cover with a lid for about 30 minutes on a medium heat; stirring occasionally.

2Give it a stir 2 or 3 times while waiting for kale to cook down. I added a 1/4 cup of water because it seemed too dry in the pan. Crumble your bacon and add to your pan. Season with salt and pepper to your taste.
