Ingredients For fresh garlic greens

  • 6 c
    fresh escarole lettuce, washed and torn
  • 2 to 3 clove
    garlic, pressed
  • 3 to 4 Tbsp
    extra virgin olive oil
  • salt and pepper

How To Make fresh garlic greens

    Prepare the lettuce by cutting an inch off the bottom. Wash the leaves well in a sink of water, rinse well to remove all the dirt. Tear the leaves into pieces, and drain on paper towel.

    Place the escarole in a large pan, add the garlic, and 1/4 inch of water. Cover the pan with a tight fitting lid and steam the leaves until wilted, about 5 to 7 minutes.

    Now that they have wilted, pour off the excess liquid. Season with salt and pepper, and add the olive oil. Toss well. Continue to cook until tender, about another 5 minutes.

    Place in serving bowl and enjoy!
