When corn is fresh in the summer, we love to use it in different ways. We plan to make this fresh corn salsa again. It's a touch sweet from the corn and kiwi, but tangy and has a hint of heat from the jalapeno. Kiwi in salsa is definitely a different ingredient but it works. We paired ours with some lime tortilla chips and it was the perfect bite.

Ingredients For fresh corn salsa

3 earsfresh corn roasted whole in oven or grill till tender

1fresh jalepeno, minced

1/4red onion minced

1avocado, diced

1fresh kiwi, peeled and diced

2 Tbspfresh cilantro, minced

2 Tbspolive oil

pinchsalt and pepper

2 tspfresh lime juice
How To Make fresh corn salsa

1Remove corn from the cob.

2Mix all fresh ingredients.

3Then whisk together oil and vinegar. Drizzle over salsa and toss gently. Refrigerate for at least an hour to mix flavors. Serve with tortilla chips.
