This is a perfect summer salad as it can be served cold or room temperature. Perfect for summer potlucks!!! I also enjoy it in the winter. Either fresh corn or frozen can be used, either way it is always bright and refreshing.

Ingredients For fresh corn salad

2 1/2 ccorn, fresh or frozen, cooked

1 smred onion, diced

3 Tbspcider vingar

3 Tbspolive oil

1/2 tspkosher salt

1/2 tspblack pepper

1/2 cfresh basil (i usually use 1 table. dry basil, more or less depending on your taste)
How To Make fresh corn salad

1Cook your corn as directed. Toss everything together, unless you are using fresh basil. If using fresh basil add that just before serving.

2This can be served cold or at room temperature.

3*****PLEASE NOTE: I usually at least DOUBLE this recipe. Left-overs get better and better.******
