Summer is here and fresh veggies are in abundance!!!!! What better way to use them than in a fresh salsa to serve with chips or on chicken, pork or fish. Use pineapple instead of adding sugar, and using green tomatoes in a completely different style

Ingredients For fresh corn and green tomato salsa

1 mdwhite onion chopped

2 smhot peppers, your choice, chopped

1/2 lgbell pepper chopped

2 mdsweet banana peppers, chopped

2 lggreen tomatoes, chopped

2 lgred tomatoes, chopped

1 lgear of fresh corn, cut off the cob

1/2 cchopped pineapple

1 tsptajin seasoning

2 Tbspred wine vinegar
How To Make fresh corn and green tomato salsa

1Chop onions, all peppers, add to large bowl

2Chop green, and red tomato, separate, add to bowl

3Microwave ear of fresh corn in husk for 2 min, shuck and cut from cob, add to bowl

4Chop pineapple, add to bowl
-
5Add Tajin seasoning and red wine vinegar. Mix well, refrigerate for at least 1 hour
