Summer is here and fresh veggies are in abundance!!!!! What better way to use them than in a fresh salsa to serve with chips or on chicken, pork or fish. Use pineapple instead of adding sugar, and using green tomatoes in a completely different style

Ingredients For fresh corn and green tomato salsa

  • 1 md
    white onion chopped
  • 2 sm
    hot peppers, your choice, chopped
  • 1/2 lg
    bell pepper chopped
  • 2 md
    sweet banana peppers, chopped
  • 2 lg
    green tomatoes, chopped
  • 2 lg
    red tomatoes, chopped
  • 1 lg
    ear of fresh corn, cut off the cob
  • 1/2 c
    chopped pineapple
  • 1 tsp
    tajin seasoning
  • 2 Tbsp
    red wine vinegar

How To Make fresh corn and green tomato salsa

    Chop onions, all peppers, add to large bowl
  • 2
    Chop green, and red tomato, separate, add to bowl
  • 3
    Microwave ear of fresh corn in husk for 2 min, shuck and cut from cob, add to bowl
  • 4
    Chop pineapple, add to bowl
  • 5
    Add Tajin seasoning and red wine vinegar. Mix well, refrigerate for at least 1 hour
