I love clementines and when paired with the aromatic taste of the fennel you end up with such a refreshing salad. Serve with or without a nice vinaigrette. Also delicious piled on grilled chicken breast but leave the romaine lettuce out of the recipe.

    fennel bulb, julienne sliced
  • 4 sm
    clementines, peeled and sectioned
  • 1 md
    tomato, diced
  • 1/2 sm
    red onion, julienne sliced

    avocado, diced

    celery stalk, julienne sliced

    cucumber,julienne sliced
  • 1/4 bunch
    cilantro, fresh, chopped
  • 1/4 bunch
    parsley, chopped
  • 2 c
    romaine lettuce leaves, chopped
  • OPTIONAL
  • 1/4 c
    pinenuts or dried cranberries

How To Make fennel salad with clementines

    Combine all ingredients in large bowl. Mix well and serve either with or without a nice vinaigrette dressing.
