There is nothing like fresh veggies in the summer so last night when I made Mexican for the family I figured I'd give mexicorn a try. It turned out so goo and fresh not at all like the caned stuff.

Ingredients For farm fresh mexicorn

  • 2 c
    fresh corn off the cob rinsed and drained
  • 1/4 c
    diced onion
  • 1/2 c
    green onion diced
  • 1/2 c
    red pepper diced
  • 1 tsp
    adobo powder
  • salt and pepper to taste

How To Make farm fresh mexicorn

    Place all ingredients in microwave steaming bag and nuke 6-8 minutes.
