  • 8 oz
    light cream cheese
  • 2/3 c
    egg substitute
  • 1/2 c
    sugar
  • 8-1/2 oz
    corn muffin mix
  • 2-1/2 c
    frozen corn, defrosted
  • 16 oz
    can creamed corn
  • 1 c
    evaporated skim milk
  • 2 Tbsp
    butter, melted
  • 1 tsp
    Mrs. Dash table blend
  • 1/4 tsp
    freshly ground nutmeg

  • Greased Crock Pot.

    Grease your slow cooker or use a liner.
  • Cream cheese, sugar, and eggs in a Crock Pot.

    Beat the cream cheese. Stir in the eggs and sugar; blend well.
  • Corn muffin mix added to Crock Pot.

    Add the corn muffin mix and remaining ingredients; blend well.
  • Casserole cooking in the Crock Pot.

    Pour into slow cooker and cook on high for 2-4 hours, depending on your Crock Pot. DO NOT double this recipe. The middle will not cook through.
