Ingredients For fabulous veggie quiche

1/4 colive oil

1 bunchbroccoli, cut into florets

1 smonion, finely chopped

3 cchopped fresh spinach

3 clovegarlic, minced

1sheet refrigerated pie pastry

4eggs

1 cmilk
-
1 Tbspminced fresh rosemary - or - 1 tsp. dried rosemary, crushed

1/2 tspsalt

1/2 tsppepper

1/2 cshredded smoked cheddar cheese, divided

1/2 cshredded swiss cheese, divided
How To Make fabulous veggie quiche

1In a large skillet, heat oil over medium-high heat. Add broccoli and onions; cook and stir until broccoli is crisp-tender. Stir in spinach and garlic; cook and stir 4-5 minutes longer or until spinach is wilted.

2Unroll pastry sheet into a 9-in. pie plate; flute edge. Fill with broccoli mixture. In a small bowl, whisk eggs, milk, rosemary, salt and pepper. Stir in 1/4 cup cheddar cheese and 1/4 cup Swiss cheese; pour over vegetables. Sprinkle with remaining cheeses.

3Bake in a preheated 375-degree oven for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand 15 minutes before cutting.
