I made this once & my fmaily just loves it. Plus sometimes I make this I make it in the morning before I head to work,wrap it up tight & place it in the ice box. Then all I have to do is pop it in the oven when I get home from work... :)

Ingredients For ever so easy stuffed peppers

2-2 2/3 cbrown rice, cooked

1 cmushrooms, fresh & sliced

1 cspaghetti sauce
-
1 cshredded mild cheddar cheese, divided

4green peppers, tops & seeds removed
How To Make ever so easy stuffed peppers

1Heat the oven to 400F.

2Then combine the rice,mushrooms, spaghetti sauce & 3/4 cup cheese. Mix well to blend.

3Then stand the peppers in a 2 qt baking dish. Fill with the rice mixture & cover.

4Bake for about 30 to 35 mins or until peppers are crisp & tender & the filling is heated through. Top with remaining cheese & bake for 5 mins more or until melted.
