Ingredients For escabeche de verduras / pickled veggies

1 lbpound red potatoes

3carrots, peeled and sliced
-
2jalapeno chilies
-
2cloves of garlic
-
2bay leaves
-
1peppers, cut and strips

1onion, cut into strips

1 capple cider vinegar
-
1 tsporegano
-
1/2 tspsalt

1/2 tspsugar
How To Make escabeche de verduras / pickled veggies

1Put potatoes in a Smart Steamer with water in base. Cover and steam for 5 minutes. Add the carrots, cover and steam for 5 minutes more or until potatoes are soft. Remove from Smart Steamer and pass through cold water to cool quickly vegetables. Put in a bowl /Pick-a-Deli with all remaining ingredients. Cover and refrigerate at least 1 hour or overnight, stirring occasionally. Serve cold
