I make succotach the way my mother made it, plain and simple. Nothing fancy added. Just three ingredients. What could be easier? And nothing could be tastier.

Ingredients For ellen's just plain succotash

  • 1 pkg
    (10 oz.) frozen corn
  • 1 pkg
    (10 oz.) frozen baby lima beans
  • 3 Tbsp
    butter
  • salt and pepper to taste

How To Make ellen's just plain succotash

  • 1
    Bring about 1 cup of water to boil in a medium saucepan. When water boils, add 1/2 tsp. salt and lima beans. Reduce heat, cover, and simmer 10 minutes.

    After 10 minutes, add corn, raise the heat to high and bring to a second boil. Reduce heat and simmer, covered, for 5 more minutes.

    Pour off water and add butter; stir until melted. Add salt and pepper to taste. Serve while hot.
