I've always liked the canned Mexicorn but I would always add things to it, so I decided to create my own dish. Here it is. Feel free to play with the amounts and add or subtract ingredients.

Ingredients For ellen's confetti corn

2 canwhole kernel corn, drained

1/4 c(1/2 stick) butter

1 smgreen bell pepper, seeded and chopped

1 smred bell pepper, seeded and chopped

1 mdonion, chopped

1/4 csour cream
-
1 tspsalt
-
1/4 tspblack pepper
-
1/2 tspdried basil, dried oregano, or chili powder, per your preference
How To Make ellen's confetti corn

1In a large skillet, melt the butter over medium-high heat. Add the onion and peppers; saute for 5 minutes, stirring frequently.

2Add the drained corn, sour cream, salt, pepper, and the seasoning of your choice. Cook, stirring often, for another 5 minutes or until heated through.
