This is from my friend in Tuscon Ariz in 1975. We picked fresh tomatoes from her garden.Then enjoyed this for brunch. Naturally fresh store bought tomatoes will be just as good..if they are ripe.

How To Make eggs baked in fresh tomatoes

1Select round medium sized tomatoes, cut a this slice from the top of each and scoop out enough pulp to leave a space large enough for an egg.

2Season cavities with salt and pepper, and drop an egg into each tomatoe. Cover the bottom of a baking pan with hot water or butter, put the tomatoes in and bake about 10-12 minutes at 360 F. season with butter and serve on toast, garnish with parsley. "Never let you'r memories be greater than your dreams."
