Ingredients For eggplant fritters with red pepper mayonnaise

2 mdeggplants

1 lgbell pepper (green, red, or yellow)

1 lgonion

8 to 10 slicewhite bread

1/2 cflour
-
2 tsppepper
-
1 tspsalt

1 lgegg
- RED PEPPER MAYONNAISE
-
1 cmayonnaise
-
1 Tbspred wine vinegar
-
1/4 tspred pepper flakes

1 tspminced garlic
How To Make eggplant fritters with red pepper mayonnaise

1Peel eggplant and cube 1 inch size. Place in large pan filled with water and salt to taste(about 1/2 tsp). Boil till soft about 30 mins. Drain eggplant in colander.

2While eggplant is boiling, cut bell pepper in small pieces. Chop onion. Place in small bowl.

3In large bowl, put drained eggplant in bowl and mash with fork. Add bell pepper,and onions. Moisten white bread. Tear bread into pieces and put in mixture in the bowl. Add flour, salt, pepper and egg. Mix thoroughly.

4In frying pan with any oil on medium heat, drop eggplant mixture by tablespoon fulls. Fry 5 mins. each side or till desired browness. Place on platter covered with paper towels. Enjoy!!!
