Ingredients For eggplant fritters

  • 2 md
    eggplants
  • 1/4 c
    sugar
  • 1
    egg
  • 1 c
    flour (self-rising)
  • 1 tsp
    vanilla
  • cooking oil (for frying)

How To Make eggplant fritters

  • 1
    Peel and cube the eggplants. Boil in salty water until tender. Drain the cooked eggplants, let cool then mash.
  • 2
    Add the egg and sugar and mix well. Then add the flour and stir until combined. Add the vanilla and stir.

    Form the eggplant mixture into small patties and drop in hot oil in a heavy skillet. Fry until brown.

    Remove the cooked patties and allow to drain on paper towel.
