This is part of a series of 'eggplant' recipes taken from a vintage cookbook. Please use any light oil of your choice instead of the fats and butter listed. I usually use Canola oil.

1egg, beaten

3 ccooked eggplant, mashed

1/2 tspsalt

1/8 tsppepper

dash cayenne

How To Make eggplant fritters

1Stir flour and egg into eggplant.

2Beat until very light. Season.

3Drop by tablespoons into hot deep fat (375 degrees F.) and fry until brown.
