My grandma always fixed this for my dad and I. No one in my family is very crazy about eggplant but I love it.

Ingredients For eggplant casserole

  • 2 c
    peeled eggplant
  • 2 Tbsp
    finely chopped onion
  • 1/4 c
    water
  • 2
    eggs slightly beaten
  • 2 slice
    white bread torn into pieces
  • 1/2 c
    milk
  • 1 Tbsp
    salt/pepper
  • 1 1/4 c
    shredded cheddar

How To Make eggplant casserole

  • 1
    Cook eggplant and onion 7 mins, drain. Combine the rest of the ingredients reserving 1/4 cup of the cheese. Mix ingredients together, put into a greased baking dish Bake 350 for 25 mins. Sprinkle remaining cheese on top and bake an additional 5 mins.
