This is always good for a simple meal with salad and garlic bread, I always have left over spaghetti sauce to use up, I have even been known to make egg plant parmesan sandwiches using the garlic bread. Hope you enjoy

Ingredients For egg plant parmesan with spaghetti sauce (by linda)

  • 1 md
    egg plant (cut in thick slices)
  • 3 lg
    eggs (whipped)
  • 2 c
    italian bread crumbs
  • 2 Tbsp
    oil (your favorite)
  • I THINK I GOT IT SPAGHETTI SAUCE
  • 2 c
    spaghetti sauce
  • 1 c
    parmesan cheese

How To Make egg plant parmesan with spaghetti sauce (by linda)

    Dip slices of egg plant in egg, then in Italian bread crumbs.

    Heat oil in pan, brown on both sides, transfer to greased baking dish, pour warmed spaghetti sauce over egg plant ,sprinkle parmesan cheese on top.

    Bake in 350 0ven for 40 minutes. Serve
