Ingredients For edamame salad

1 pkgfrozen, shelled edamame

1 canwhite shoepeg corn

1 smred onion, diced
-
1/3 cred bell pepper, diced
-
1/3 corange bell pepper, diced

1/3 cyellow bell pepper, diced
-
1 smbunch cilanto, finely chopped
-
2 Tbspwhite balsamic vinegar
-
4 Tbspolive oil, extra virgin
-
salt and pepper to taste
How To Make edamame salad

1Steam or boil edamame for 3 to 4 minutes and let cool.

2Combine all vegetables.

3Mix oil, vinegar, salt & pepper and whisk well. Pour, all at once, over vegetables and mix well.
