    16 oz jar pickled sliced beets, 2 tbsp liquid reserved
  • 1
    9 oz box frozen corn kernels, thawed
  • 1
    9 oz box frozen sugar snap peas, thawed
  • 1/2 lg
    red bell pepper, chopped
  • 1
    celery rib, chopped
  • 1 Tbsp
    chopped fresh parsley
  • 2 Tbsp
    red wine vinegar
  • 1 tsp
    dijon mustard
  • 3 Tbsp
    olive oil
  • 1/8 tsp
    each, salt and pepper
  • 2 tsp
    chopped fresh basil

How To Make easy summer beet salad

    In lg bowl, combine beets. corn, peas, red bell pepper, celery and parsley, whisk well.

    In another bowl, whisk together beet juice, vinegar, mustard, oil, salt and pepper. Stir in basil. Pour mix over beets and gently toss.
