Ingredients For easy summer beet salad

116 oz jar pickled sliced beets, 2 tbsp liquid reserved

19 oz box frozen corn kernels, thawed

19 oz box frozen sugar snap peas, thawed

1/2 lgred bell pepper, chopped

1celery rib, chopped

1 Tbspchopped fresh parsley

2 Tbspred wine vinegar

1 tspdijon mustard

3 Tbspolive oil

1/8 tspeach, salt and pepper

2 tspchopped fresh basil
How To Make easy summer beet salad

1In lg bowl, combine beets. corn, peas, red bell pepper, celery and parsley, whisk well.

2In another bowl, whisk together beet juice, vinegar, mustard, oil, salt and pepper. Stir in basil. Pour mix over beets and gently toss.
