My mother-in-law makes a wonderful creamed spinach. I tried my version, adjusted it to my taste, and added Parmesan cheese. I didn't measure anything when I made this, so feel free to adjust amounts if needed.

Ingredients For easy cheesy creamed spinach with garlic

1 - 1 1/2 lbfresh baby spinach

2 Tbspolive oil

4 Tbspbutter

3 Tbspall-purpose flour

4 Tbspminced garlic (or you can use 2-3 Tbsp garlic powder)

1 1/2 cmilk, more or less to get the right consistency

1/2 cevaporated milk

1/8 cParmesan cheese

salt, to taste

pepper, to taste
How To Make easy cheesy creamed spinach with garlic

1In a non-stick skillet, heat oil. On medium heat, add handfuls of spinach leaves. Add more as it cooks down until all spinach leaves are dark and wilted. Remove from heat and set aside.

2In a small saucepan or skillet, melt butter over medium heat.

3Add flour and incorporate it well to make a roux. Let it come to a bubble and cook for a few minutes.

4Add garlic. Whisk until smooth.

5Slowly add both types of milk whisking as you pour. If it is too thick, add extra milk.

6Whisk in Parmesan cheese until smooth and heated through.

7Pour cream sauce over the spinach and mix well. Season with salt and pepper.
