A great appetizer or great side dish. Actually better if made a day or two ahead! You can adjust your likings by the aount of cilantro you prefer. This was served and passed down to me from an employee many years ago. Enjoy!

Ingredients For drema's "poor man's caviar"

2 canblack eye peas, drained

2 canblack beans, drained

2 cancorn, yellow kernel, drained

2 canrotello diced tomatoes w/chilies

2 bottlezesty italian dressing (sm bottles)

1 smcilantro bunch, chopped coarse
How To Make drema's "poor man's caviar"

1In large mixing bowl combine all ingredients except cilantro and onions. Mix thoroughly!

2Gently stir in cilantro and onions. Mix well. Add all of dressing and toss or stir gently. Cover in airtight container and store in frig until ready to serve. Serve cold with chips! Excellent!
