I had a hard time getting my son Daniel to eat vegetables when he was little but he loved cheese so I developed this recipe to get him to try them. He loved them and they are a frequent item on my table ever since. He especially loves them served with spaghetti and garlic toast. My husband loves them too.

Ingredients For daniel vegetables

2 mdzucchini
-
2 mdyellow squash
-
1 mdred bell pepper
-
1/4 citalian seasoned dry bread crumbs

1/4 cgrated parmesan cheese

1-2 Tbspextra virgin olive oil
How To Make daniel vegetables

1Chop vegetables into uniform 1/2 to 1 inch chunks. (removing stems, veins and seeds from bell pepper)

2Place all vegetables in a medium size bowl and drizzle with enough olive oil to coat all when stirred.

3In another small bowl mix the bread crumbs and grated parmesan cheese together.

4Pour the crumb/cheese mixture over the vegetables and stir until vegetables are coated well with mixture.

5Spread coated vegetables in a single layer onto a large cookie or jelly roll pan.

6Cook under the broiler (turning once) until they are browned well. (nice and dark golden)
