curry succotash

I love succotash but wanted to try something different then just the basic, salt, pepper and hot sauce. Came up with this tonight, and it's a nice change, so thought I'd share it.

Ingredients For curry succotash

32 ozchicken stock, or broth

1 tspminced garlic. or 2 cloves

1/8 tspblack pepper
-
3-4 dashtexas pete hot sauce. more or less to taste

1/2 tspcurry powder

2 Tbspbutter
-
(2) 12 oz pkgfrozen lima beans

(1) 12 oz pkgfrozen corn
-
2 slicecooked bacon, crumbled (optional)

1/2onion, minced. or 1/2 tsp onion powder
How To Make curry succotash

1Cook bacon until crisp, crumble when it cools. Meanwhile add chicken broth/stock to stockpot. Add spices. onion, butter, frozen corn and Lima Beans.

2Bring mixture to a boil, then reduce heat to medium low/low and simmer for 15-20 minutes, until Lima beans are softened.

3Serve with crumbled bacon on top (optional)
