Ingredients For crunchy green bean bake

1 lbfresh green beans

1/2 cwhole wheat bread crumbs

1 Tbspchopped fresh parsley

2 Tbspolive oil, divided

1 smred bell pepper, sliced

1onion, chopped
-
1 tspminced garlic
-
1/4 cchicken broth

1 Tbsplemon juice
How To Make crunchy green bean bake

1Heat oven to 350. Spray a casserole dish w/ cooking spray. Bring a pot of water to boil. Add green beans, cook 3 mins, drain.

2In bowl, gently toss bread crumbs and parsley w/ 1 tbsp oil, set aside. In skillet, over medium heat, cook red bell pepper and onion in 1 tbsp oil until crisp-tender, about 2 mins. Add garlic. Cook 30 seconds, remove from heat.

3Stir into skillet, the chicken broth, lemon juice and green beans. Season w/ salt and pepper. Spoon mix into casserole dish. Sprinkle bread crumb mix evenly over green beans. Bake 10 mins, or until heated through.
