Ingredients For crunchy green bean bake

  • 1 lb
    fresh green beans
  • 1/2 c
    whole wheat bread crumbs
  • 1 Tbsp
    chopped fresh parsley
  • 2 Tbsp
    olive oil, divided
  • 1 sm
    red bell pepper, sliced
  • 1
    onion, chopped
  • 1 tsp
    minced garlic
  • 1/4 c
    chicken broth
  • 1 Tbsp
    lemon juice

How To Make crunchy green bean bake

    Heat oven to 350. Spray a casserole dish w/ cooking spray. Bring a pot of water to boil. Add green beans, cook 3 mins, drain.

    In bowl, gently toss bread crumbs and parsley w/ 1 tbsp oil, set aside. In skillet, over medium heat, cook red bell pepper and onion in 1 tbsp oil until crisp-tender, about 2 mins. Add garlic. Cook 30 seconds, remove from heat.

    Stir into skillet, the chicken broth, lemon juice and green beans. Season w/ salt and pepper. Spoon mix into casserole dish. Sprinkle bread crumb mix evenly over green beans. Bake 10 mins, or until heated through.
