cooking spray

1head cauliflower separated into florettes and cooked 3-4 minutes in microwave

1 cancream of celery soup, low fat, low sodium

1 creduced fat cheddar sheese, shredded

1/2 clite mayonnaise

1 Tbspchopped onion

2large eggs beaten

1 tspkosher salt
-
1/2 tspblack pepper

1 Tbsphot sauce
-
1 cpanko bread crumbs

1 Tbspbutter
How To Make crunchy, cheesy cauliflower bake

1Pre heat oven to 350 degrees. Prepare baking pan with cooking spray and set aside. I use a soufflet dish but a 9x9 inch pan works fine. Combine all ingredients (from cooked cauliflower to hot sauce) in a mixing bowl.

2Mix ingredients well and pour mixture into prepared baking dish. Top with Panko and if you're feeling decadent, break apart a tablespoon of butter and add to the top of the bread crumbs. Bake uncovered 45 minutes

3Serve with any protein of your choice. Last time I made this, I served it with meatloaf and mushroom gravy.
