My mom used to make this for us when we were kids, and it was by far my favorite veggie dish, and now it's my kid's too! Next time you make a rice dish, make extra to use for this recipe. You can even turn this into a one-dish meal by adding some deli roasted chicken. Great way to enjoy a lot of green veggies and whole grains!

Ingredients For crockpot green rice casserole

1 1/2 cevaporated milk

1/4 cmelted butter
-
1/4 cchicken broth
-
3eggs
-
3 ccooked brown rice
-
1 cparsley, chopped
-
2 boxfrozen chopped spinach (thawed, squeezed & drained)

1/2 cgreen onions
-
1 cparmesan cheese
How To Make crockpot green rice casserole

1Combine milk, butter, broth and eggs. Beat until frothy.

2Stir in remaining ingredients and pour into crockpot.

3Cook on high for 1 hour. Then turn to low and cook another 4-6 hours.
