A guilty pleasure. I usually only make half the recipe now because of a smaller household. My Grannie loved these! Please note that the one hour chilling and soaking time is not included in the prep time.

Ingredients For crispy fried onion rings

2 lgspanish onions, or vidalia (1 3/4 pounds)

cold water, to cover

1 call-purpose flour

1/2 tspbaking soda

1/2 tspsalt

1 tspsugar
-
1/4 tsppepper
-
3/4 cbeer
-
1 lgegg, beaten
-
vegetable oil
How To Make crispy fried onion rings

1Peel onions. Cut into 1/2 inch slices and separate into rings. Place in a bowl and cover with cold water. Chill in the refrigerator for 1 hour. Drain on paper towels.

2Combine the flour and the next 4 ingredients; stir well. Add the beer and egg, stirring with a wire whisk until smooth.

3Pour the oil to a depth of 3 inches into a Dutch oven; heat to 375°. Dip the onion rings into the batter; fry, a few at a time, for 3 minutes or until golden. Do not crowd them or they will not turn out as crisp! Drain on paper towels.
