When the garden is overflowing with zucchini, give this zucchini chips recipe a try. Cooking them in the air fryer makes the chips crispy with very little oil. Panko gives them a crunchy texture, while the seasoned bread crumbs add a hint of Pecorino Romano cheese flavor. Enjoy by themselves or with your favorite dipping sauce. These air fried zucchini chips are a great alternative to fried potato chips.

2zucchini, medium

2eggs, beaten

1/2 cseasoned bread crumbs (with Pecorino Romano cheese)

1/2 cPanko bread crumbs

How To Make crispy air fryer zucchini chips

1Slice zucchini into slices, about 1/4-inch thick each. Sprinkle salt on top and bottom. This helps draw out the moisture. Let slices sit about 15 minutes.

2Blot the moisture with a paper towel.

3In a bowl, whisk the eggs.

4In another bowl, mix the Panko and bread crumbs together.

5Dip the zucchini slices into the egg and then the bread crumb mixture.

6In a single layer, place the zucchini slices in the air fryer basket. Spray with olive oil.

7Fry at 390 degrees for a total of 8 minutes. Flip the slices after 4 minutes. Spray the other side with more olive oil. Continue cooking for the remaining 4 minutes.
