Ingredients For cretan green beans

3 Tbspolive oil

1/2 cchopped yellow onion

1 clovegarlic, minced

1 lbgreen string beans, tips snapped off

1 ccanned diced tomatoes (drain and reserve 1/2 cup liquid)

1 Tbsptomato paste

1/4 tspground black pepper

1/2 tspsalt
-
1/2 tspdried oregano

2 Tbspchopped fresh parsley

water, as needed
How To Make cretan green beans

1Heat oil in heavy saucepan. Add onions and garlic. Cook, stirring, until golden.

2Add all remaining ingredients, including reserved tomato juice. Add water if needed, to just cover beans.

3Cover pan and simmer for 30 minutes. Serve beans with juices.
