Ingredients For cretan green beans

  • 3 Tbsp
    olive oil
  • 1/2 c
    chopped yellow onion
  • 1 clove
    garlic, minced
  • 1 lb
    green string beans, tips snapped off
  • 1 c
    canned diced tomatoes (drain and reserve 1/2 cup liquid)
  • 1 Tbsp
    tomato paste
  • 1/4 tsp
    ground black pepper
  • 1/2 tsp
    salt
  • 1/2 tsp
    dried oregano
  • 2 Tbsp
    chopped fresh parsley
  • water, as needed

How To Make cretan green beans

  • 1
    Heat oil in heavy saucepan. Add onions and garlic. Cook, stirring, until golden.

    Add all remaining ingredients, including reserved tomato juice. Add water if needed, to just cover beans.

    Cover pan and simmer for 30 minutes. Serve beans with juices.
