I found this delicious recipe on the net when looking for ways to use a bumper crop of Brussels sprouts 2 years ago.

Ingredients For creamy sprouts and noodles

  • 1/2 lb
    fresh brussels sprouts, quartered
  • 1 md
    onion,finely chopped
  • 1 Tbsp
    butter or margerine
  • 4 oz
    sour cream
  • 4 oz
    cottage cheese
  • 1 clove
    garlic, minced
  • 1/2 tsp
    paprika
  • 1/4 tsp
    salt
  • 1/8 tsp
    caraway seeds, optional
  • 1 1/2 c
    noodles, uncooked
  • 1/2 c
    soft bread crumbs
  • 1 Tbsp
    melted butter or margerine

How To Make creamy sprouts and noodles

    Cook and drain noodles. Cook sprouts until tender
  • 2
    Saute onion in butter until golden brown. Remove from heat and stir in sour cream, cottage cheese, garlic, paprika, salt and caraway seeds. Add sprouts and noodles.

    Spoon into sprayed 1 qt. baking dish. Toss bread crumbs and melted butter and sprinkle over. Bake, uncovered, at 375 for 20 minutes until golden brown on top.
