I wanted a corn side dish with grilled chicken and all I had on hand was a can of Mexicorn. So I added a little more flavor for this quick and simple dish.

Ingredients For creamy mexicorn

  • 11 oz
    mexicorn, drain about 1/2 of the liquid
  • 2 oz
    cream cheese
  • 2 Tbsp
    unsalted butter
  • salt and pepper, to taste
  • 1 Tbsp
    minced jalapeno, optional

How To Make creamy mexicorn

  • 1
    Add all ingredients in a small saucepan and heat on low heat until the cream cheese is melted and the corn is thick and creamy.

    Serve.

    Variation: Place all ingredients into a crock pot on low, Cook for about 3 hours until thick and creamy. Salt and pepper to taste.
