I wanted a corn side dish with grilled chicken and all I had on hand was a can of Mexicorn. So I added a little more flavor for this quick and simple dish.

Ingredients For creamy mexicorn

11 ozmexicorn, drain about 1/2 of the liquid

2 ozcream cheese

2 Tbspunsalted butter

salt and pepper, to taste

1 Tbspminced jalapeno, optional
How To Make creamy mexicorn

1Add all ingredients in a small saucepan and heat on low heat until the cream cheese is melted and the corn is thick and creamy.

2Serve.

3Variation: Place all ingredients into a crock pot on low, Cook for about 3 hours until thick and creamy. Salt and pepper to taste.
