    fresh spinach

    butter

    shallots, minced

    minced garlic

    heavy cream

    mascarpone cheese

    grated Parmigiano-reggiano

How To Make creamy cheesy spinach

    Add water and salt to a large pot. Bring to a boil. Add the spinach and blanch for 2 minutes. Drain well, squeezing out as much moisture as possible. Set aside.

    Add the butter to the pan and, once melted, cook the shallots and garlic about 4 minutes. Season with salt.

    Stir in the heavy cream, mascarpone, and Parmigiano cheese. Cook 1 minute and add the spinach. Cook 2 minutes until cheese is melted. Taste and season with salt and pepper.
