I got this recipe from a cookbook that had odd names for all of its recipes. The cookbook is called A Dinner A Day. Hopefully, you can use fresh produce in this veggie pie. Have listed reduced fat and vegetarian options.

Ingredients For crazy vegetable pie

1/3 lbfresh tomatoes, chopped

1 mdzucchini, chopped

1 mdyellow squash, chopped
-
1/2 lbfresh spinach, stemmed and chopped

2green onions, sliced
-
1/4 cgrated parmesan cheese or vegetarian substitute
-
1 1/2 cwhole, lower fat milks, or fat-free milk, or a milk substitute

3/4 cbiscuit mix, regular or reduced fat
-
3eggs or egg replacer to equal
-
1 tspworcestershire sauce
-
2 tspdijon mustard
-
seasoning to taste
How To Make crazy vegetable pie

1Preheat oven to 400°F. Grease a 9 in. quiche or pie plate.

2Rinse all vegetables well. Peel and chop tomatoes. Trim and chop zucchini and yellow squash. After cleaning spinach; then, dry, stem it, and chop it. Trim and slice green onions.

3Scatter all vegetables and cheese over bottom of baking dish.

4In a medium bowl, whisk together next 5 ingredients. Season, and pour egg mixture over items in dish.

5Bake about 30 minutes, or until tests clean with a knife or toothpick.
