Ingredients For couscous primavera

2-3 Tbspolive oil

1bell pepper( yellow green or orange) cored, seeded, chopped

1zucchini, sliced
-
1/2 csweet onion, thinly sliced

8stalks asparagus, cut into 1 inch spears

1/4 tspcrushed red pepper flake (optional)

1 dashsalt and pepper
-
1 ccouscous
-
1 1/4 cwater or chicken broth
How To Make couscous primavera

1In a medium skillet, heat 1-2 tablespoon oil over moderate heat.

2Add pepper, zucchini, onion and asparagus and saute, stirring, for 5 minutes or until crisp-tender.

3In a medium saucepan, bring 1-1/4 cups water or chicken broth to a boil.

4Add remaining oil and couscous.

5Cover, remove from heat and let stand 5 minutes.

6Toss together couscous, seasonings and vegetables and serve.
