This was a recipe of Mark's Mom's. It was one of her favorites. She also added diced tomatoes also, because she liked them. Thank you Mark, for sharing part of your mom!

Ingredients For corn & zucchini medley, mark's

  • 1 1/2 Tbsp
    oil
  • 2 c
    zucchini, cubed
  • 1 1/2 c
    corn kernels
  • 1/3 tsp
    salt
  • 1 sm
    onion, cubed
  • 1/4 tsp
    pepper
  • 4 oz
    shredded cheese
  • 2 Tbsp
    bacon bits, optional

How To Make corn & zucchini medley, mark's

    In large skillet, heat oil. Put zucchini, corn, onion in to skillet and cook about 10 min. Spoon out cooked vegetables into a serving dish. Sprinkle with cheese and bacon.
