This is from The Cooking Book by the Junior League of Louisville (1979). It's called Peyton's Corn Mousse from Judy Hoge. What I love about it is that it's a microwave recipe. This is my go-to for a quick and easy side dish.

3 Tbspcorn starch

1/4 cmilk

2 cancorn, cream-style

3eggs, beaten

1/2 tspsalt

1/2 csugar
How To Make corn pudding - mw

1Grease a 1 1/2 quart casserole (I use a 7x11 inch glass dish, but I've used round ones in the past).

2Stir cornstarch into milk then blend in rest of ingredients. Pour into prepared dish and put dish into microwave.

3Cook on HIGH 5 minutes, then stir. Cook on HIGH 5 minutes more, then stir. Cook on HIGH 5 minutes more. Let stand 5 minutes before serving.

4Alternatively, you can bake this in a 375°F preheated oven for 45-60 minutes; stirring every 15 minutes.
