I came up with this recipe for a Thanksgiving work potluck. Everyone wanted the recipe.

Ingredients For corn casserole with bacon and jalapenos

  • 1 pkg
    bacon
  • 4 can
    corn - 29 oz each can
  • 2 can
    creamed corn - 15 oz each can
  • 4 oz
    diced jalapenos - not drained
  • 8 oz
    cream cheese - cubed
  • 2 c
    shredded mexican cheese blend
  • 1 c
    milk
  • 1 box
    jiffy corn bread mix

How To Make corn casserole with bacon and jalapenos

    In large pot cook bacon till crispy and then break into pcs. Set pcs aside.

    Put all remaining ingredients into pot bacon was cooked in. Make sure to leave some of the bacon grease in the pan for flavor.

    Mix all together and add bacon pcs. Cook till heated through and cheese is melted. Serve.
