One Thanksgiving that I worked in ICU at NMH, a nurse friend brought this to the dinner that we prepared. It was delicious and I had to have the recipe.

Ingredients For corn casserole

  • 1 can
    cream style corn
  • 1 can
    corn niblets, undrained
  • 1 box
    jiffy corn muffin mix
  • 8 oz
    sour cream
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    salt
  • 2
    eggs, beaten
  • 1 stick
    margarine, melted
  • 16 oz
    mild cheddar cheese

How To Make corn casserole

  • 1
    Melt margarine in a skillet.

    In a small bowl, mix the sour cream, both corns, eggs, seasonings, and 1 cup of the shredded cheese.

    Add margarine. Pour into a greased 13x9-inch pan. Top with remaining cheese. Bake, uncovered, at 350 degrees for 45 - 50 minutes. Let stand 10 minutes before serving.
