One Thanksgiving that I worked in ICU at NMH, a nurse friend brought this to the dinner that we prepared. It was delicious and I had to have the recipe.

Ingredients For corn casserole

1 cancream style corn

1 cancorn niblets, undrained

1 boxjiffy corn muffin mix

8 ozsour cream

1/4 tspblack pepper
-
1/2 tspsalt

2eggs, beaten

1 stickmargarine, melted

16 ozmild cheddar cheese
How To Make corn casserole

1Melt margarine in a skillet.

2In a small bowl, mix the sour cream, both corns, eggs, seasonings, and 1 cup of the shredded cheese.

3Add margarine. Pour into a greased 13x9-inch pan. Top with remaining cheese. Bake, uncovered, at 350 degrees for 45 - 50 minutes. Let stand 10 minutes before serving.
