Got this recipe a long time ago. My Kids who are grown now hated carrots until I made these. They are especialy good in the summer time but look very pretty on a Salad Bar anytime of year

Ingredients For copper pennies

5 cups carrots
-
1 can tomato soup
-
1/4 cup vinegar
-
3/4 cup sugar

1 large green pepper, diced

1 med. onion sliced

1/2 cup veg. oil
-
1 tsp worcestershire sauce

1 tsp salt
-
1 tsp pepper
How To Make copper pennies

1Cook sliced into 1/2 inch carrots in water for about 5 min., you dont want them muchie,drain & let cool. set aside.

2Combine tomato soup,vinegar, & sugar. Bring to a boil & let cool. Combine all ingredients. Mix well, marinate overnight
