I can't remember which food network show I got this idea from. I am sure this is not the exact recipe,in fact it may not be even close but this dish turned out very tasty and will become a part of our monthly recipes.

Ingredients For cooked escarole

3 slicebacon
-
1head of escarole
-
1/8 cgranulated sugar

1/4 cgive or take an inch cider vinagar

1or2 Tbspred pepper flakes
How To Make cooked escarole

1cook bacon in heavy skillet

2drain all but 3 tbsp of fat from pan.

3reheat the 3 tbsp of fat,add sugar and cook to smooth and bubbly

4VERY CAREFULLY add vinegar to pan whisk until smooth.

5Add Escarole,crumbled bacon and pepper flakes.

6cook till lettuce JUST starts to wilt, remove from heat

7serve hot
