colorado caviar
(1 rating)
My local grocery deli sells this for $7.00/lb! So of course I had to come up with my own recipe. We love it as a side dish with a great grilled steak or like a dip. Mix it with a little cottage cheese and dip with potato chips...any way you eat it, its great!

2As with most things, the longer it sits the better it tastes. Store in air tight container. Not sure how long it will store for, in our house this recipe doesn't last longer than a couple of days. LOL. Enjoy!
