Ingredients For cold oriental noodle salad

    9-10oz package soba noodles
  • 1
    english cucumber cubed
  • 1 c
    carrots cut
  • 1 Tbsp
    sesame oil
  • 1/3 c
    lite soy sauce
  • 1/4 c
    rice vinegar
  • 1/3 c
    finly chopped cilantro
  • 3
    garlic cloves minced
  • 2 Tbsp
    brown sugar
  • 1 tsp
    red pepper flakes
  • juice of one lime
  • 1 1/2 tsp
    sesame seeds

How To Make cold oriental noodle salad

  • 1
    Cook soba noodles according to package, rinse in cold water. Add carrots cucumbers and cilantro and set aside.

    In a bowl whisk together rest of ingredients, except for sesame seeds and pour over noodles and veggies. Sprinkle with sesame seeds, cover and refrigerate for at least 2 hours.
