Ingredients For chopped salad with avocado

2limes, juiced

1/4 canred onion, minced

1/4 tspsea salt

2 Tbspvegetarian mayo - or eevo - (non-vegetarians can just use mayonnaise that has olive oil in it) for decreased fat content

1avocado - chopped

1 - 15 oz canno salt added kidney beans, drained & rinsed

2red peppers - sliced into strips

fresh cracked black pepper (to taste)

6 cchopped romaine
How To Make chopped salad with avocado

1In a large bowl, whisk together the lime juice, red onion, salt, and mayuonaise (or EVOO)

2Add the avocados, beans, and peppers (any color - red - green - yellow). Season generously with black pepper. Toss gently to combine

3Arrange the romaine on flour plates and spoon the dressed avocado, beans, and peppers on top.

4Serves 4 as a side salad.
