Ingredients For chopped salad with avocado

    limes, juiced
  • 1/4 can
    red onion, minced
  • 1/4 tsp
    sea salt
  • 2 Tbsp
    vegetarian mayo - or eevo - (non-vegetarians can just use mayonnaise that has olive oil in it) for decreased fat content
  • 1
    avocado - chopped
  • 1 - 15 oz can
    no salt added kidney beans, drained & rinsed
  • 2
    red peppers - sliced into strips
  • fresh cracked black pepper (to taste)
  • 6 c
    chopped romaine

How To Make chopped salad with avocado

    In a large bowl, whisk together the lime juice, red onion, salt, and mayuonaise (or EVOO)
  • 2
    Add the avocados, beans, and peppers (any color - red - green - yellow). Season generously with black pepper. Toss gently to combine
  • 3
    Arrange the romaine on flour plates and spoon the dressed avocado, beans, and peppers on top.

    Serves 4 as a side salad.
