Ingredients For cherry tomato& yellow squash crumble

3 Tbspbutter

1-1/4 cbreadcrumbs

2 Tbspfinely chopped parsley

1 smonion, chopped

1/2 lbyellow crookneck squash, diced

3 ccherry tomatoes

1 tspminced garlic

1/2 cshredded swiss cheese, i used reduced-fat
How To Make cherry tomato& yellow squash crumble

1Heat oven to 400. Spray a 9" square baking dish w/ cooking spray. Melt 1 tbsp butter in lg skillet over medium heat. In bowl, pour 2 tbsp butter over breadcrumbs. Stir in parsley.

2Add onion to skillet and cook 9 mins. Stir in squash and cook 4 mins. Add tomatoes and garlic and cook until tomatoes are warmed through, about 2 mins. Transfer tomato mix to baking dish.

3Sprinkle cheese on top. Spread breadcrumb mix over cheese. Bake about 30 mins, or until bubbly.
