Ingredients For cherry tomato& yellow squash crumble

  • 3 Tbsp
    butter
  • 1-1/4 c
    breadcrumbs
  • 2 Tbsp
    finely chopped parsley
  • 1 sm
    onion, chopped
  • 1/2 lb
    yellow crookneck squash, diced
  • 3 c
    cherry tomatoes
  • 1 tsp
    minced garlic
  • 1/2 c
    shredded swiss cheese, i used reduced-fat

How To Make cherry tomato& yellow squash crumble

    Heat oven to 400. Spray a 9" square baking dish w/ cooking spray. Melt 1 tbsp butter in lg skillet over medium heat. In bowl, pour 2 tbsp butter over breadcrumbs. Stir in parsley.

    Add onion to skillet and cook 9 mins. Stir in squash and cook 4 mins. Add tomatoes and garlic and cook until tomatoes are warmed through, about 2 mins. Transfer tomato mix to baking dish.

    Sprinkle cheese on top. Spread breadcrumb mix over cheese. Bake about 30 mins, or until bubbly.
