I put these vegetables together for dinner yesterday to go with my Oven Roasted Pork Loin Roast. My husband and I are the complete opposites in more ways than one, he loves lots of meats and I love lots of veggies, so I added what I had fresh and a few that were left over from the previous day to make this vegetable combination. It was pure heaven for both of us. I had (1) slice of Pork and lots and lots of veggies, and he had lots of everything smile. We had Store bought RED SKIN potato Salad, SO IT WOULDN'T GO TO WASTE, INSTEAD OF THE USUAL MASHED POTATOES. We were both happy campers

Ingredients For cheesy zucchini vegetable medely

  • 4 md
    zucchini sliced thin
  • 1 lg
    onion sliced and and halved
  • 3-4 clove
    garlic minced or sliced thin
  • 6
    mini sweet peppers cut into rings or strips
  • 2 tsp
    steak seasoning
  • 1 1/2 tsp
    each granulated onion & garlic powder
  • 8 oz
    fresh mozzarella cheese cubed
  • 4 oz
    shredded parmesan cheese or 3 -cheese italian blend
  • 2 c
    left over veggies(broccoli, grape tomatoes & onions) optional
  • 2 Tbsp
    butter
  • 1 1/2 Tbsp
    canola or olive oil

How To Make cheesy zucchini vegetable medely

    Prep and slice zucchini and add to a large bowl.

    Peel & slice Onions, and add to same bowl, but separate rings.

    Chop peppers into rings, and add to bowl.
  • 4
    Add oil and butter to a large skillet over low heat.
  • 5
    Then add sliced veggies to skillet when butter has melted and oil is hot.

    Sprinkle the spices over the veggies and stir. Cook till desired crispness is reached.

    Cube fresh mozzarella.

    Add left over veggies from previous day if you have them. Stir to mix with other veggies and then add fresh mozzarella over top of veggies.

    Add the 3 cheese Italian cheese blend or parmesan, then cover with a lid just until cheese melts.

    Serve while still hot. ENJOY I love this vegetable combination. Sprinkle with chopped chive if desired.
