I first tried this at a Christmas dinner and really loved it. I immediately came home to try to see if I could match the recipe I had tried and came up with this delicious casserole!

Ingredients For cheesy broccoli casserole

  • 2 lb
    frozen broccoli florets
  • 4 c
    crumbled ritz crackers
  • 2 tsp
    italian seasoning
  • 1/2 tsp
    cayenne pepper
  • 2 Tbsp
    paprika
  • 1/2 tsp
    black pepper
  • 1 stick
    butter, melted
  • 1 1/2 lb
    velveeta cheese, cubed
  • cooking spray

How To Make cheesy broccoli casserole

    Preheat oven to 450°. In a large stock pot of boiling salted water, blanch broccoli florets for 3 minutes. Remove from water and shock in a large bowl of ice water. Remove from ice water and drain on a paper towel lined platter. Set aside.

    Using a plastic bag, crush crackers. Add the Italian seasoning, paprika, cayenne, pepper, garlic salt and melted butter until well combined. Set aside.

    In a large casserole dish lightly greased with butter add broccoli and cheese; mix well. Pour cracker topping on top of cheese and broccoli. Wrap with foil and bake for 15 to 20 minutes in oven. Remove from oven. Take foil off and allow to rest for 5 minutes before serving.
